Grilled Chicken Tacos- Great way to use leftovers

Do you ever get in a lunch rut? Or have a night where you just don’t feel like cooking? Me too. This is why I’m a huge fan of making leftovers work in unique (you may think strange) ways. For example when we grill chicken I always make enough for leftovers for a few days. You have so many options for simple meals like Grilled Chicken Tacos. 

You don’t have to simply stick to tomatoes and lettuce in your taco…try any veggies you have on hand. I love grilled or roasted yellow squash and zucchini along with a big slice of avocado. Most veggies can cook up quickly and it’s so simple to throw them in a tortilla. You can also just go with raw veggies for the ultimate quick meal like I did.

For the taco above I used leftover grilled chicken with the produce I had in the house- yellow tomatoes, cilantro and avocado and a little sprinkle of cheese. Takes minutes to throw together and you still get a healthy meal with a variety of plants!
