Apricot Smoothie

I definitely have a little learning curve with my apricot tree. While it’s a wonderful tree to have in your back yard the fruit is extremely delicate and only lasts for a couple days. It also starts rotting on the tree if you wait one second past a yellow color. Literally. one. second. This means you need to be creative quickly to use them up so they don’t start to spoil. We lost a few but once I got the “we-ripen-quickly” message I got busy on some creative uses.

I thought I’d share a few creations here. First up…super simple smoothie. This smoothie was so basic I wouldn’t really call it a “recipe”. My mind started thinking of all sorts of creations using vegetables and other fruits but I just wanted it to taste like apricots otherwise, what’s the point? There are plenty of other smoothies I can make year round but there’s only a short little window to enjoy fresh apricots.

So here is my simple concoction:

 

 

 

 

 

 

 

 

 

Apricot Smoothie

about 4 to 6 apricots, pitted (more if desired)

1 cup vanilla yogurt

1 cup almond milk (regular milk or rice milk would work as well)

1 cup ice

Blend! I used the vanilla yogurt to add a little sweetness but you could easily use plain yogurt and sweeten with honey as well.

We all loved this smoothie and the apricot flavor came through the way I wanted. Poppie (the picky eater) asked for seconds so all in all a success! Pretty easy!

Sounds great! My cousin had a tree & froze what they couldn’t eat to use all year round in smoothies, deserts, spread on toast & more. I’m thinking of getting an apricot tree myself.
