Grilling Veggies with Simple Flavor Combinations

Poppie: “Oh…are you cooking salad for dinner? ”

Me: “sort of…I’m cooking some veggies”

Poppie: a few seconds later…”here you go” as she hands me rose petals and leaves to cook.


The blow up pool is set up in the backyard and I’m constantly changing 3-year olds in and out of wet bathing suits; summer is officially here! I believe that every season brings with it simple ways to eat healthy. Summer time is grilling. I far prefer the flavor you get out of grilling or roasting vegetables rather than steaming and it’s such a fast and simple way to cook.

I especially love to grill veggies at the end of the week when you have that weird hodgepodge of food in your refrigerator. For instance, that half a bell pepper, 1 small zucchini or half of the asparagus. Produce doesn’t last forever so I just toss what’s left in some oil and salt and grill away! You don’t need any recipes, just season depending on your mood. Here are some ideas to add different flavors without a lot of fuss.

After brushing with olive oil and a sprinkle of salt…

- Squeeze some lemon juice over them prior to grilling

- Sprinkle with garlic powder (my quick go-to plan)

- Add a dash of red pepper flakes for a spicy kick

Or you can…

- Marinate (10 -20 minutes) with olive oil, lemon juice, salt and a dash of fennel seed

- Marinate (10 – 20 minutes) with olive oil, balsamic vinegar, garlic, and salt

- Grill veggies in a foil pack with fresh Rosemary sprigs (this is amazing with corn)

All are simple ways to add tons of flavor so you don’t have to give up great taste while trying to increase your veggie intake!
