Grilled Zucchini- Simplicity at it’s Best

Over the last 18 years of being a dietitian one of the biggest hurdles I’ve seen my clients face is finding ways to get more fruits and vegetables in each day. I find myself struggling with it as well. I have no problem getting in a few fruits and a couple veggies, but my goal is to up it to 5-8 servings a day. I love my veggies, but pushing it to that next level when you are so busy all day has been an obstacle for me so I imagine it’s also a challenge for others. Keeping things simple is what I always remind myself. Using a variety of cooked and raw veggies is the way to go so you don’t feel so overwhelmed with finding creative ways to get it all in.

Statistically speaking, the average Amercian only consumes 3 servings of fruits and vegetables a day. This is one of those situations where the message itself is simple, eat more fruits and vegetables. Doing it is the challenge. While you can certainly find an abundance of wonderful veggie recipes out there, they often take up too much time to cook for those every day dinners. That’s why I love summer time because grilling is by far one of the easiest and tastiest ways to cook all sorts of vegetables. No recipes needed, getting back to that message of simplicity, and they cook up with such amazing flavor. You can grill anything you find…asparagus (my favorite), carrots, bell peppers, squash, sweet potatoes, you name it. I imagine you can’t grill leafy greens but heck, you could try!

Next time you grill take out some veggies and throw them on. So simple. Here’s the steps to grill your basic veggies using zucchini as an example.

Grilled Zucchini (or replace with any veggie of choice)

Ingredients

Zucchini, cut lengthwise

Olive oil

Salt

Directions

1.   Heat grill to medium-high heat

2.   Brush zucchini with olive oil and sprinkle with salt to taste

3.   Place directly on grill and turn frequently to cook evenly. Cook until fork tender, about 10 minutes.

wow, this is such a simple reminder of how easy it can be to eat those veggies!! I’m a veggie fanatic, you name it, I’ve attempted to eat it…or make the babies eat it…ahem…
