We all know that dark leafy greens are good for us, but for many the flavor is just too strong. While I love all veggies I live in a household with a whole lot of picky eaters so creativity is key. Kale chips are sort of a trend right now and for good reason. You can make a tasty little chip that you and your family just might enjoy that’s packed with healthy nutrients.
Skeptical? I have proof…both my picky eaters ate some which is remarkable, but the real test is that my husband, hater of all dark greens, popped some in his mouth and said they were “ok”. That is big! He even ate a few more. They are also simple to make so if you haven’t tried them yet…I urge you to give it a go! This is my simple recipe.
Ingredients
1 bunch of kale, rinsed and dried very well (make sure the leaves aren’t wet or they won’t cook right)
1 tablespoon olive oil
salt to taste (don’t use much)
Directions
1). Preheat oven to 300 degrees.
2). Tear Kale along the rib into 1-inch pieces and place into a large bowl. Toss with olive oil and salt to evenly coat.
3). Spread over a cookie sheet and bake for 20 minutes or until kale appears crisp. Remove from oven, cool and serve.
Note: Try experimenting with your favorite flavors. Add garlic powder, cayenne or cumin for a new twist.
